| Second course: | Beside the traditional roast pork, lamb and veal, we have "Su prattu de cassa" (unique local dish prepared with game, potatoes, aromatic herbs), braised wild boar, Olianese pork cutlets, veal spitfuls, "Parasambene" (veal diaphragm), Olianese beans stew, etc. |
